How I Made Honey Maple Glazed Chicken Thighs

So far it’s looking like these post will be about my experience with recipes that I’ve tried. Sometimes I feel like I’m making the same things over and over again. So I’ll google recipes that I know I”ll probably have ingredients for at home which was the case for this meal. I knew I had honey, seasoning and chicken lol.

I got the recipe for the honey glazed chicken from here. Ingredients below:

INGREDIENTS

  • 6 chicken thighs, bone in or out, with or without skin*
  • Salt and pepper, to season
  • 2 teaspoons garlic powder, to season
  • 6 cloves garlic, crushed
  • 1/3 cup honey
  • 1/4 cup water (or chicken broth)
  • 2 tablespoons rice wine vinegar(or apple cider vinegar, or any white vinegar)
  • 1 tablespoon soy sauce

MY EXPERIENCE:

I did not have soy sauce or any of the vinegars listed above, but I knew I could pull it off. I also had maple syrup so I mixed it in with the honey. Instead of cooking everything on the stove, I browned the chicken (I used bone in thighs) on both sides for about 5minutes each. I made the glaze as instructed and put everything in the oven on 400 degree Fahrenheit’s for about 45minutes. I’m taking a guess on the time, I didn’t set a timer, I just went based on past experience and my “cooking intuition.” lol

The green beans were very basic, I just blanched them in boiling salt water. I like a semi snap to my green beans so I don’t like to over cook them or else they will get too soft. The rice is actually processed food, from the brand Knorr (I think it was cheddar and broccoli flavor).

I got the wild idea to add chopped mushrooms to the rice (in my mind that made it healthier lol). Packaged foods are usually very high in sodium and calories so I don’t recommend purchasing them often, if at all. It was an impulse purchase for me.

This was a really good dinner and clearly another unprepared blog lol, hence the reason there are not enough pictures of the prepping and cooking process. But I hope you got something out of this post and are inspired to make this meal or something similar to it.

I promise I will get better with preparation for these food blogs. If you decide to try this recipe, let me know. Let’s Chat!

I have a long history with mental illness. Overcoming depression made me realize my own resilience. It also made it clear that I wasn’t taking care of myself. I believe that in order for us to fully engage with ourselves and others we have to make time for self-love through our self-care habits. My goal with this blog is to encourage women in my age group to make time for self-care daily.
